I’m always looking for a decent salad at lunch which for some reason is incredibly hard to find in Longmont. I finally found that was good enough to share at Cafe Rio. It’s a GIANT salad that is big enough to split up into two meals. It begins with a large freshly made tortilla lining the bottom of the bowl, next comes a scoop of rice and beans. Followed by crispy romaine lettuce and topped with pico de gallo, guacamole, tortilla strips, cilantro and your choice of protein, I personally prefer the grilled chicken. They have two dressing choices, but I have to admit I’ve only tried their cilantro lime vinaigrette and have yet to try their house dressing that looks more like a creamy ranch. The dressing is what really makes this salad aside from its generous size. We haven’t even gotten to the best part yet, it is only $5.49! Well on Tuesdays and it’s an extra dollar for the grilled chicken, but still it’s a damn good deal. Last time I had so much left over I made burrito out of it and had it for lunch the next day!
