Flippin Flapjacks

Pancakes have been a breakfast favorite of mine my whole life, but no one makes better pancakes than my Sister. For years, seriously years I’ve been trying to come close to hers and am finally like 90% of the way there. The fact that these are somewhat round and have crispy edges is seriously a giant feat. Like myself, my Sister is not much of a measurer and with two kids she could probably make these in her sleep. This is her recipe with a few little additions, so you’ll have to go by feel more so than exact measurements. I just shake the flour container into the mix until it looks good, maybe this is why it’s taken me years to perfect.

  • 1 egg
  • 1/4 cup of milk (I usually use Almond)
  • 1/4 cup water
  • 1/2 teaspoon baking soda
  • Dash of vanilla
  • Sprinkle of cinnamon

Mix

  • Add flour, like 1 1/2 cups or so
  • 1 cup of applesauce
  • 1 teaspoon baking powder
  • 2 tablespoons grapeseed oil

Stir together and add apple juice to thin

*For crispy edges add lots of butter to the pan*
